Fresh Start Spring Detox//Healthy Cheesecake Recipe

So I am so excited to tell you all about some new lifestyle changes Rodge and I have made. I am also super excited to share a recipe with you for hardly any calorie cheesecake as I have partnered with Hiland Dairy and that will come in just a bit in this post. So I have been constantly struggling  with my thyroid and hormones for the past year. I have gotten some help in that arena which feels glorious but my weight has just stayed the same. And weight loss has been such a goal of mine for the last two years. It quite frankly sucks to eat clean, count calories, and work your tail-end off exercising for a 2 pound deficit. Yeah..I will just keep the two pounds and live a normal life, right?! Meanwhile most of my friends live off of champagne and pizza and fries and wouldn't even dare run unless some mad man was chasing them with a chainsaw. Or they do restorative yoga as their main form of exercise and are size 2's. Yeah...insert the eye roll emoji or the middle finger emoji here. I sometimes want to throw my asparagus at them. 

Anyhow this has taken a toll on me, my social life, my intimate life..you name it. I mean seriously you guys..real talk. I have tried everything known to man with very minimal results. I have juiced for 28 days, I lost 4 pounds and was absolutely miserable. I embodied a caveman and did the paleo thing...OMG, that made me gain weight and feel sick from all the protein. My thighs were also getting huge and trust me, as a former tennis player, my thighs need no help gaining weight. I became a vegetarian....and went carb crazy. I am also an O blood type and it turns out my body cannot survive as a vegetarian. I was always hungry and I bruised so easily and my skin was just pale and thin and I literally had zero energy. And as far as workouts..you guys, I tried it ALL. Tracy Anderson...Kayla's BBG program, hell, I even worked with a trainer 4 days a week for an hour at a time. I lost ten pounds in 3 months. I cannot even begin to tell you how frustrated I have felt and feel. 

So I finally visited a doctor specializing in nutrition and weight and I am going to refrain from naming names at this time but promise I will do a follow up post after my 28 days on the program. I will also tell you all about the program then. I love reviewing things for you all! So just consider yourself lucky. Weighing and measuring every single thing in his office had to be one of the worst moments of my entire life. I weighed so much. (again, not sharing any of it until the program is over so be sure to stay connected with me) 

Anyhow I have a guide that I follow with the foods that I can eat and how much. I have cut all carbs, sugars, fats, dairy and alcohol from my diet. I eat about 500 calories a day and no more then that. Again, I do not advise this unless you see your practitioner. I have been on the program now for about a week and am feeling great. My social calendar is non existent but I need to remain incredibly focused right now and prepare my meals at home. I do not want to be tempted. Nor do I want to watch all my friends stuff their mouths with pasta and cake. My will- power will eventually get there and I am so excited for that. I want to look at that stuff and say nope...not going back there again, not only for my appearance but for my health. Early signs of arthritis have set into my joints and I know that even though this is hereditary, I have the power to not participate in the statistics. Both sides of my family also struggle with diabetes and I am not going down that road. The time is now and I am doing this you all! I have lost ten pounds thus far and I am going to lose the last 40. Just you watch. 

So with my very restricted diet, my sweet tooth has been killing me. I miss afternoon high tea and bread pudding at Dragon-Moon so bad. But again, not going to stray away from my end goals. #eyeontheprize

During my grocery run last week I knew I wanted to get some cottage cheese. I am allowed a bit of that and was excited to see Hiland Dairy had a low fat cottage cheese with sea-salt. It contains added nutrients and protein and this is perfect for me right now. They have various other products too and I am so excited to start incorporating Hiland products into my weekly meal planning. They are all about health and wellness and that so aligns with my mission. That alone will be reason enough to incorporate them into my recipes. They are easy to use and are everyday staples. And also as promised, the recipe for the guilt free cheesecake....

Ingredients

  • 2 eggs

  • 2 tsp. flaxseed meal

  • 2 TB Hiland low fat cottage cheese

  • 2 TB Greek Yogurt

  • 1 tsp. vanilla

  • 1 tsp. lemon juice

  • 1 TB. Xylitol or Stevia to your taste

  • cinnamon to sprinkle on top before baking

Instructions

  1. In a blender or nutribullet, combine the following ingredients

  2. After everything is mixed and blended. Pour into a ovenproof bowl. I used a small pyrex dish, spray a spritz with olive oil.

  3. Bake for at least 30 min. at 350 degrees or until a toothpick comes out clean.

  4. Refrigerate.

  5. Top with fresh berries. ( I love blackberries and blueberries)

Serving size: 2
