Cucumber Herb Salad Recipe

It’s true: I’m on a major health kick right now. As soon as spring rolls around I immediately start craving the cool, crisp, and fresh flavors of seasonal produce. Salads have always been Lin’s specialty. Every time we’d return home from vacation to four ingredients in the house, he’d somehow manage to serve a salad that would make Salata jealous. While this makes me incredibly lucky, it also makes me a salad snob. I don’t settle for just any salad. In my opinion, a great salad has a surprising flavor combo and gives me all of the nutrients I need from a one-dish meal.

This one is soooo delicious!!!!

Cabbage Soup

This low-calorie soup is quick and easy but full of flavor!! It also keeps extremely well for easy lunch or dinner throughout the week. I know, I know, cabbage soup doesn’t sound that exciting, BUT this is one of my favorite vegetable soup recipes. Don’t worry, we aren’t doing a cabbage soup diet around here, I just eat this cabbage soup because it is nutritious, delicious, and always hits the spot. It is the soup I turn to when I want to feel good and detox from a weekend of gluttony.

And it is hearty and oh so satisfying!

Apple Cake With Custard Sauce

I had received so many Granny Smith apples in my Local Farm bag so I decided to make an apple cake! I love baking with this particular apple variety because they’re nice and tart and don’t get mushy in the oven! And I love this apple cake recipe from Sue Moran. I have made it before and was so in love with it.

Olive Oil Lemon Cake Recipe (And A Few Thoughts On Becoming Older)

As I’ve gotten into my 40’s, birthdays have taken on way more personal meaning to me. They’ve become a welcome moment of self-reflection — a time to take stock and set intentions for the next year of life. I love the way that birthdays call us to stop and think about the passage of time;  while it can feel uncomfortable, being more conscious of how fast our lives go by helps us carpé diem and live each day like you truly mean it. That’s truer than ever this year — as I turned 43 in February.

Three Cheese Quiche Recipe

Most quiches start with three basic ingredients: a pie crust, heavy cream (or half and half), and eggs. From there you could go in many directions with meats, veggies, and cheeses. But for today’s recipe I decided to go with a classic three cheese quiche! We are trying to really limit the meat we eat. Not give it up completely..just not consume so much of it.

Tuscan Bean Soup Recipe -Slow Cooker Recipe

I’ve always been extremely fond of bean soups this time of year! And my very favorite bean soup of all is this Slow Cooker Tuscan Bean Soup. I’ve been making variations of this soup for a few years but this version was my absolute favorite! I think this soup is so delicious because I use my slow cooker. Those hours of cooking help the flavors meld together. The vegetables are very tender, the beans are soft and creamy, and because the greens are added at the end, they don’t end up overcooked.
