Blackberry And Blueberry Goat Cheese Salad Recipe

This salad is perfect in late summer, when blackberries are dripping off their stems. And whipped goat cheese and honey-mustard vinaigrette pair perfectly with peppery arugula and sweet vine-ripe fruit.

Salad Ingredients

12 oz Arugula

3-4 oz whipped goat cheese from Soignon

1 cup Blackberries and 1 cup Blueberries

1/4 cup walnuts and dried cranberries

Toss the arugula, goat cheese, berries and nuts with the honey mustard dressing, and serve.

Dressing Ingredients

2 tbsp Stone-ground mustard

2 tbsp Honey

1/3 cup Rice vinegar

1/2 cup Extra virgin olive oil

1/2 Small shallot, minced (2 tbsp)

1/2 tsp Salt

1/4 tsp Pepper

Whisk all ingredients in a small bowl until the oil and vinegar emulsify.

I love this on it’s own or with a pizza!
