Creamy Cajun Chicken And Wild Rice Soup

As the temperatures drop a bowl of hot chicken and rice soup is the perfect comfort food! This Cajun Comfort Chicken & Rice Soup by The Defined Dish is everything you crave with flavorful and juicy chicken, creamy broth, fresh vegetables and spicy Cajun seasoning. I switch this recipe up up a little to tailor it more for the ingredients I love!

Ingredients

  • 4 Tablespoons Butter, Divided

  • 1 Small Yellow Onion, Chopped

  • 3/4 Cup Celery, Chopped

  • 3/4 Cup Carrots, Chopped

  • 2 Cloves Garlic, Minced

  • 1/4 Cup All-Purpose Flour

  • 3 Tablespoons Tony’s Original Cajun Seasoning

  • 1 Tablespoon Fresh Thyme Leaves

  • 1 Jar (4 Ounces) Diced Pimentos

  • 4 Cups Low-Sodium Chicken Broth

  • 1 1/2 Cups Whole Milk

  • 2 Cups Cooked Wild Rice

  • 2 Cups Shredded Rotisserie Chicken

    Directions

    1. In a large Dutch oven, melt the butter over medium heat.

    2. Add in the onions, celery, carrots and garlic to the pot and cook for 8-10 minutes until softened, stirring often.

    3. Add the flour, Seasoning and thyme leaves and continue to cook for 2 minutes, stirring often.

    4. Add the pimentos, broth and milk and reduce the heat to a simmer.

    5. Cook uncovered, stirring occasionally for 8-10 minutes until the mixture thickens.

    6. Add the rice and shredded rotisserie chicken and cook until heated through, about 2-3 minutes.

    7. Serve and enjoy!
