Paleo Bar-B-Q Chicken Stuffed Sweet Potatoes

Anyone else spend their Sunday with friends eating amazing food and screaming at the top of your lungs at the tv at two football teams last night?! Surely I am not alone here!

Traditionally, Super Bowl food is a day for pizza, fried chicken wings, rotel, and beer but this year I really wanted to stay on top of my 2019 goals . The result? AWESOME. Did anyone complain? Bar-B-Q chicken stuffed sweet potatoes are an easy, healthy, gluten-free, and dairy-free weeknight dinner recipe the whole family will enjoy too. I have never seen grown men devour something so quick actually so this recipe is even hubby approved. Plus sweet potatoes are loaded with vitamin A, C, and B6 which plays a key role in maintaining healthy skin and hair ladies. They are also loaded with fiber and potassium and they are one of the most delicious foods on the entire planet! I *might* be slightly addicted to sweet potatoes.

And I am addicted to Bar-B-Q sauce!

The flavors of this Bar-B-Q chicken dish are a taste bud’s dream: The sweetness of the barbecue sauce, the saltiness of the chicken, and the kick of flavor from the red onion and cilantro… All of this results into a flavorful burst of barbecue chicken stuffed potato perfection. OMG-are you hungry yet?!

So first things first before I share the recipe because I am so excited to tell you about the main inspiration for my dish from Head Country.

PALEO BAR-B-Q LOVE

Delicious and healthy.

For them it all started with a sauce. Not too tangy. Not too sweet. Nothing fancy about it, really. Just a bold, rich, perfectly balanced blend of sweet and savory (with a hint of heat) born in the heartland from the finest Bar-B-Q traditions. Folks say it tastes like home. And I agree 100%. Original. Chipotle. Hickory Smoke. And more. Their six sauces are the all-star cast of sensational flavors, perfect for making any meal more mouthwatering and memorable. And now they are adding a 7th sauce to their family—Head Country Sugar Free Bar-B-Q sauce. And for those of us trying to make some better decisions, well I think you will be huge fans of this. It tastes delicious. And I had sugar obsessed men eating this recipe and they didn’t even know how much healthier I made their Super Bowl dinner! LOL. The consistency of the sauce is nice too, not too thin. Not too thick. And I am just so excited to make my Bar-B-Q dishes and not have to sacrifice on my goals or spend so much time making a sauce by scratch.

Okay, I have you kept waiting long enough so here is the delish recipe for these potatoes!

Paleo Bar-B-Q Chicken Stuffed Sweet Potatoes Recipe

Ingredients

  • 4 cooked sweet potatoes about ½ pound each ( try to get the same size so they all cook at the same temp and time)

  • 2 Tbsp. olive oil

  • 1 pound chicken breasts pounded thin, cut into 4 portions

  • ½ tsp. salt

  • ¼ tsp. pepper

  • ¾ cup Head Country Sugar Free Bar-B-Q sauce

  • ½ red onion finely diced

  • Salt and pepper to taste

  • Cilantro finely chopped


    Instructions

    1. Cook sweet potatoes in the Instant Pot or in the oven.

    2. In a large skillet over medium heat add olive oil and chicken breasts.

    3. Cover with a lid and cook for 10-12 minutes, flipping chicken breasts halfway through.

    4. Once chicken is completely cooked, shred with a fork and add BBQ sauce. Stir until combined.

    5. Serve BBQ chicken in cooked sweet potatoes with diced red onion, salt, pepper, and cilantro

Easy breezy, right?!!!! Prep time is about 20 minutes tops and cook time is 40 minutes mainly because of the sweet potatoes but you can bake those ahead of time.
