Waldorf Chicken Salad (Whole30)

So incredibly excited for all the incredible feedback from y’all about wanting to do a #Whole30 with me ! I learned SO much from the first one I did. Follow along over at @whole30withsam . We will all start together Monday August 17th-TODAY!!!!

I got all organized yesterday and had all of my Instacart deliveries delivered today! Just in time to make lunch too.

This is one of my favorite Whole30 recipes because it’s so simple and delish, plus you can make quite a bit at one time so you have lunch for a few days!

This Waldorf Chicken Salad comes together with omega-3 rich pecans, sweet grapes, red onion, celery, tender shredded chicken all held together with creamy, avocado oil mayo. We devour it over a bed of greens with some salt and pepper and lots of lemon juice!!

Waldorf Chicken Salad RECIPE (Whole30)

INGREDIENTS

  • 2 cups cooked shredded chicken breast

  • 1/2 cup grapes, halved

  • 1/3 cup celery, diced

  • 1/4 cup red onion, diced

  • 1/4 cup pecans, chopped

  • 1/3 cup Primal Kitchen Mayo

  • 6 Tbsp. lemon juice

  • Salt & pepper to taste

INSTRUCTIONS

  1. Combine all of the ingredients in a bowl and mix until well combined.

  2. For a Whole30 option, serve on top of a bed of greens or in a lettuce leaf.

So simple, right?!

And it is just so good!
